Uchi is a fine weapon with fire for low level infusion or sharp at any level. You wanna minimize strength as much as you can (i.e. minimum for Uchigatana, if it requires any), obviously focus on Dex with the sharp infusion, and then you want to work on your Vigor and Vitality stats.

It is easy to get bleed resist, and bleed is the main reason to use uchigatana. Without landing bleed, the damage in general is pitiful. Having a lot of low damage hits is fine, if you can get them in.
