Based on the information provided since the engine temperature gauge is reading low or stuck at 160 and since the engine cooling fans are on all of the time this can indicate a fault with the engine coolant temperature sensor wiring being shorted out or damaged or an issue with the engine computer itself internally to where it has to be replaced.A tstat failure forced the car to go into a recovery mode where the fans stay on at full blast and the temp gauge pegs to zero. I don’t know why gm made it such that it overrides the temp gauge but the tstat is likely your problem. Very common c7 failure. it is indeed dumb that the temp gauge gets blanked out essentially.If I were to do it again I would use a 1/4" short 10mm socket on a wobble extension.
